Aha, tis that time of the year when the fishing in Ireland starts to get its momentum and anglers of all walks of life, be it young, be it old, be it male or female, you'll find them all along the banks of our rivers, loughs and canal-ways of Ireland. Pike fishing is very poplar around the spring time, and no better place than on Moycullen lakes with great pike fishing on these smaller lakes that's connected with nearby Lough Corrib. Fishing for pike over 20 lbs. (9.072 Kg.) are recorded annually. So be prepared to catch the pike of the day at Moycullen lakes. Moycullen is located to the north-west of Galway city about 7 miles on the N59 to Clifden. This year an early spring arrived and the weather could not have been better to us anglers, after a long cold freezing winter on record. We have been fortunate, since St Patrick Day, the angler has been very busy, and fish reports in the past weeks is some lakes around Ireland catches  up to 17 lbs fish on the hook. Wow, some record for a catch in spring time. Another fish was caught on the river a 14 pounder that weekend, and the kind angler released it back for another day of fishing. Mid 50's, and just completed a 2 year college program and Looking forward in continuing onto a 3rd level education at University.

Currently, unemployed due to downturn in the economy, and employment is very challenging to come by. Especially, when your in your mid 50's.

I guess, employers in todays climate, been young is the key to success in finding employment.

So now, stay at home this gives me an opportunity, to see if I can add some extra income from been on the net?

i just caught my first salmon today?

what i want to know is whats the best way to cook the wild irish salmon it was 11 lbs im going to cut the steaks tomorrow

I would filet it instead - that way you and your guest do not need to worry about bones.

Marinate - overnight if possible:

1 cup Rosemary fresh
1/2 cup of Thyme - fresh
2 tbls of garlic powder
2 tbls of onion powder
1/2 cup olive oil - good quality
salt & pepper to taste

Grill or bake with a cedar plank.....for about 20 min each side.

Serve with Bernaisse sauce

Recipe as follows

Bernaise Sauce

Bernaise sauce is basically Hollandaise Sauce with flavoring added. Never allow the water to really boil. Watch the sauce carefully and as it begins to thicken remove it from the heat and keep stirring. Use with steaks, hamburger, chicken and vegetables.

2 teaspoons fresh tarragon, chopped or 1 teaspoon dried tarragon
2 teaspoons shallots, finely chopped
salt
pepper
3 tablespoons wine vinegar
HOLLANDAISE SAUCE
fresh tarragon, chopped
fresh parsley, chopped

Cook down the tarragon, shallots, salt pepper and wine vinegar until it is almost a glaze and amounts to about 3/4 tablespoon. Add this glaze to the top of the double boiler with the egg yolks and water before adding the butter. Continue in same manner as Hollandaise sauce. Add chopped tarragon and parsley to finished sauce.
